Sending email from a multi-function device or photocopier is a common practice.  Microsoft Office 365 provides two ways to do this:

  1. Authenticated SMTP
  2. Anonymous SMTP

Given that the LAN of most networks is pretty secure we tend towards Anonymous SMTP.  Saves wear and tear when passwords are reset and it’s unlikely that a compromised system is going to take advantage of the user domain connection back to Exchange Online to send spam.

Set the copier SMTP to:   userdomain.mail.protection.outlook.com
Set the copier SMTP port to:  25

In Office 365 -> Admin -> Exchange -> Mail Flow -> Connectors

Set up a static IP connection to listen for anonymous relay.
